WHere is a home-style interpretation of a cocktail from our latest menu. Designed as a party-sized prepared mix which is packed full of essence of a Christmas time, making it excellent for your holiday party. Save the extra cordial you can use for breakfast cocktails, sweets, or to make another batch of bikinis.

Yields 10 guests
To make the Citrus Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Premix (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
Making the Syrup: Combine all the items inside a saucepan, bring to a gentle boil, mixing to dissolve. Next, take off the heat allowing it to cool fully. Decant into an clean bottle, close it and store chilled, where it will keep for around a month.
Preparing the Cocktail Base: Combine all the liquid ingredients into a big jug, allow it to infuse for one hour, then pass it through , ideally through muslin, so it's fully clarified.
To serve: Pour 85ml of the cocktail base into a cocktail shaker containing ice, and stir carefully for a minute until cold. Filter into a cold coupe glass or a similar vessel, top with some cranberries adding the final touch by giving it a light spray of the essential oil above the glass.
